These Oreo Cheesecake Bites are a quick and easy dessert. Made with a crushed Oreo base and a creamy cheesecake topping, they are perfect for parties or a sweet treat.

  • 18 Oreo cookies, finely crushed (about 1 1/2 cups)
  • 4 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1 large egg
  • 1/4 cup sour cream
  • 6 additional Oreo cookies, roughly chopped, for topping

Instructions

  1. Preheat your oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, combine the finely crushed Oreo cookies and melted butter. Mix until well combined.
  3. Press about 1 tablespoon of the Oreo mixture into the bottom of each muffin liner.
  4. In a large bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.
  5. Add the vanilla extract and egg, beating until just combined. Do not overmix.
  6. Stir in the sour cream until smooth.
  7. Divide the cheesecake batter evenly among the muffin liners, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until the centers are just set.
  9. Remove from the oven and let cool completely in the muffin tin on a wire rack.
  10. Once cooled, refrigerate for at least 2 hours before serving.
  11. Before serving, sprinkle the roughly chopped Oreo cookies over the top of each cheesecake bite.
