A quick and flavorful dish featuring tender salmon and crisp vegetables in a homemade teriyaki sauce.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp sesame seeds

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Add salmon fillets and cook for 3 minutes per side. Remove from pan.
  3. In the same pan, sauté garlic, bell pepper, broccoli, and carrot for 3 minutes.
  4. Mix soy sauce, honey, rice vinegar, and ginger in a bowl.
  5. Pour sauce into the pan with vegetables and bring to a simmer.
  6. Mix cornstarch with water and stir into the sauce to thicken.
  7. Return salmon to the pan and coat with sauce.
  8. Garnish with sesame seeds before serving.

Notes

  • Use fresh salmon for best results.
  • Adjust honey to taste for sweetness.
  • Serve over rice or noodles.
