- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp sesame seeds
- Heat olive oil in a pan over medium-high heat.
- Add salmon fillets and cook for 3 minutes per side. Remove from pan.
- In the same pan, sauté garlic, bell pepper, broccoli, and carrot for 3 minutes.
- Mix soy sauce, honey, rice vinegar, and ginger in a bowl.
- Pour sauce into the pan with vegetables and bring to a simmer.
- Mix cornstarch with water and stir into the sauce to thicken.
- Return salmon to the pan and coat with sauce.
- Garnish with sesame seeds before serving.
