A creamy and delicious strawberry swirl cheesecake with a buttery graham cracker crust and a sweet strawberry topping.

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup strawberry puree
  • 1 tbsp cornstarch

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Pour half the batter over the crust. Swirl in half the strawberry puree mixed with cornstarch.
  5. Add the remaining batter and swirl in the rest of the strawberry mixture.
  6. Bake for 50-60 minutes until the center is set. Cool completely before refrigerating for at least 4 hours.

Notes

  • Use room-temperature cream cheese for smoother batter.
  • Chill the cheesecake for best texture.
  • Fresh strawberries work best for the puree.
