- 1 lb boneless, skinless chicken breasts, sliced
- 2 tbsp vegetable oil
- 1/2 cup teriyaki sauce
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 cups cooked rice
- 1 tbsp cornstarch (optional, for thickening)
- Heat oil in a large pan over medium-high heat.
- Add chicken and cook until browned, about 5 minutes.
- Add garlic and ginger, stir for 30 seconds.
- Toss in bell pepper and onion, cook for 3 minutes.
- Pour teriyaki sauce over the mixture and stir well.
- If desired, mix cornstarch with 1 tbsp water and add to thicken the sauce.
- Simmer for 2-3 minutes until sauce coats the chicken and vegetables.
- Serve hot over rice.
Notes
- For extra crunch, add broccoli or snap peas.
- Adjust sauce thickness with more or less cornstarch.
