A quick and easy stir-fry dish with tender chicken and a sweet-savory teriyaki sauce.

Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 2 tbsp vegetable oil
  • 1/2 cup teriyaki sauce
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 cups cooked rice
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Heat oil in a large pan over medium-high heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add garlic and ginger, stir for 30 seconds.
  4. Toss in bell pepper and onion, cook for 3 minutes.
  5. Pour teriyaki sauce over the mixture and stir well.
  6. If desired, mix cornstarch with 1 tbsp water and add to thicken the sauce.
  7. Simmer for 2-3 minutes until sauce coats the chicken and vegetables.
  8. Serve hot over rice.

Notes

  • For extra crunch, add broccoli or snap peas.
  • Adjust sauce thickness with more or less cornstarch.
  • Use low-sodium teriyaki sauce for a healthier option.
