Prepare delicious and healthy steak and potato meal prep bowls for a week of easy lunches or dinners. This recipe features tender steak, roasted potatoes, and vibrant green beans, all seasoned to perfection.

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, quartered
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, toss the quartered baby potatoes with 1 tablespoon of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, paprika, thyme, salt, and pepper. Spread the potatoes in a single layer on one of the prepared baking sheets.
  3. Roast the potatoes for 20 minutes.
  4. While the potatoes are roasting, in another large bowl, toss the steak cubes with the remaining 1 tablespoon of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt, and pepper.
  5. After the potatoes have roasted for 20 minutes, add the green beans to the baking sheet with the potatoes. Toss gently to combine.
  6. On the second prepared baking sheet, spread the seasoned steak cubes in a single layer.
  7. Return both baking sheets to the oven. Continue roasting for another 10-15 minutes, or until the steak is cooked to your desired doneness and the potatoes and green beans are tender.
  8. Divide the cooked steak, potatoes, and green beans evenly among 4-5 meal prep containers.
  9. Allow the bowls to cool completely before covering and refrigerating.

Notes

  • You can customize the vegetables based on your preferences. Broccoli, bell peppers, or asparagus work well.
  • For a spicier kick, add a pinch of red pepper flakes to the seasoning.
  • These meal prep bowls can be stored in the refrigerator for up to 4-5 days.
  • Reheat in the microwave for 2-3 minutes or in a preheated oven until warmed through.
