  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add rice, chicken broth, lemon juice, lemon zest, garlic, thyme, oregano, rosemary, salt, and pepper.
  3. Drizzle with olive oil.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. Fluff rice and shred chicken slightly before serving.
