2 tuna steaks (about 6 oz each)
2 tablespoons sesame seeds
1 tablespoon olive oil
1 cup cooked brown rice
1/2 cup shredded carrots
1/2 cup thinly sliced cucumber
1/4 cup chopped green onions
2 tablespoons soy sauce (low sodium)
1 tablespoon rice vinegar
1 teaspoon honey
1/2 teaspoon grated fresh ginger
Instructions
Pat tuna steaks dry with paper towels.
Press sesame seeds onto both sides of the tuna steaks.
Heat olive oil in a large skillet over medium-high heat.
Sear tuna for 2-3 minutes per side for medium-rare, or longer for desired doneness.
Remove tuna from skillet and let rest for a few minutes before slicing.
In a small bowl, whisk together soy sauce, rice vinegar, honey, and ginger for the dressing.
Divide cooked rice between two bowls.
Top rice with shredded carrots, sliced cucumber, and chopped green onions.
Slice tuna against the grain and arrange on top of the vegetables.
