A creamy and delicious pumpkin cheesecake with a spiced crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs, sugar, cinnamon, ginger, nutmeg, and butter. Press into a 9-inch springform pan.
  3. Bake crust for 10 minutes, then cool.
  4. Beat cream cheese and sugar until smooth. Add vanilla and eggs, one at a time.
  5. Mix in pumpkin puree, cinnamon, ginger, and cloves.
  6. Pour filling over crust. Bake for 50-60 minutes until set.
  7. Cool completely before refrigerating for at least 4 hours.

Notes

  • Use room temperature cream cheese for smoother batter.
  • Chill cheesecake overnight for best texture.
  • Serve with whipped cream if desired.
