  • 2 salmon fillets (6 oz each)
  • 1 cup fresh pineapple chunks
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • 1/2 cucumber, sliced
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or skillet to medium-high heat.
  2. Season salmon fillets with salt and pepper.
  3. Grill salmon for 4-5 minutes per side or until cooked through.
  4. In a small bowl, mix soy sauce, honey, and lime juice to make the glaze.
  5. Brush the glaze over the salmon during the last minute of cooking.
  6. Assemble the bowls with rice as the base.
  7. Top with grilled salmon, pineapple chunks, cabbage, avocado, and cucumber.
  8. Garnish with cilantro and drizzle any remaining glaze on top.
