Savory and satisfying Miso Glazed Salmon Bowls featuring flaky salmon, fluffy rice, and crisp vegetables.

Ingredients

  • 1 lb salmon fillets, skin on or off
  • 2 tbsp white miso paste
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cups cooked brown rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, maple syrup, rice vinegar, ginger, garlic, soy sauce, and sesame oil.
  3. Place salmon fillets on the prepared baking sheet. Spread the miso glaze evenly over the top of each salmon fillet.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon bakes, assemble the bowls. Divide the cooked brown rice among two serving bowls.
  6. Top the rice with steamed broccoli and shredded carrots.
  7. Once the salmon is cooked, place one fillet in each bowl.
  8. Garnish with chopped green onions and sesame seeds. Serve immediately.

Notes

  • Adjust the amount of maple syrup to your sweetness preference.
  • Feel free to add other vegetables like bell peppers, snap peas, or spinach.
  • For extra flavor, marinate the salmon in the miso glaze for 15-30 minutes before baking.
