A simple and healthy dish featuring salmon marinated in Mediterranean flavors, grilled to perfection on skewers.

Ingredients

  • 1 lb salmon fillet, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 lemon, sliced
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, pepper, and paprika.
  3. Toss salmon cubes in the marinade and let sit for 15 minutes.
  4. Thread salmon, onion, and lemon slices onto skewers.
  5. Preheat grill or grill pan to medium-high heat.
  6. Grill skewers for 3-4 minutes per side until salmon is cooked through.
  7. Serve immediately.
