  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup uncooked farro
  • 3 cups vegetable broth
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup chopped red onion
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil (for dressing)
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt (for dressing)
  • 1/4 teaspoon black pepper (for dressing)

Instructions

  1. In a medium bowl, toss the chicken pieces with 1 tablespoon olive oil, oregano, garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the farro and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the farro is tender and the liquid is absorbed.
  4. While the farro cooks, prepare the dressing. In a small bowl, whisk together the lemon juice, 2 tablespoons olive oil, dill, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  5. To assemble the bowls, divide the cooked farro among four serving bowls. Top with the cooked chicken, cucumber, tomatoes, olives, and red onion.
  6. Drizzle each bowl generously with the lemon-herb dressing and sprinkle with fresh parsley. Serve warm or at room temperature.

Notes

  • You can prepare the chicken and farro ahead of time for quicker assembly.
  • Feel free to add other Mediterranean-inspired ingredients like feta cheese (if not vegan/dairy-free), bell peppers, or chickpeas.
