  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup whole wheat couscous
  • 1 1/2 cups hot water or vegetable broth
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons harissa paste
  • 1 tablespoon olive oil (for harissa oil)

Instructions

  1. Season beef cubes with cumin, smoked paprika, salt, and pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add beef and cook for 5-7 minutes, until browned on all sides and cooked to desired doneness. Remove beef from skillet and set aside.
  3. Combine couscous and hot water or broth in a medium bowl. Cover and let stand for 5 minutes, or until liquid is absorbed and couscous is fluffy.
  4. In a separate small bowl, whisk together harissa paste and 1 tablespoon olive oil to make the harissa oil.
  5. In a large bowl, combine cooked couscous, cucumber, cherry tomatoes, red onion, and parsley. Drizzle with lemon juice and toss gently to combine.
  6. Divide couscous mixture among serving bowls. Top with cooked beef.
  7. Drizzle each bowl with harissa oil before serving.

Notes

  • You can substitute other vegetables like bell peppers or zucchini.
  • For extra flavor, marinate the beef for at least 30 minutes before cooking.
  • Adjust the amount of harissa oil to your spice preference.
