A delicious and healthy Mediterranean falafel bowl packed with fresh ingredients.

Ingredients

  • 1 cup cooked quinoa
  • 6 falafel patties, baked or air-fried
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons hummus
  • 1 tablespoon tahini sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Prepare quinoa according to package directions.
  2. Bake or air-fry falafel patties until golden brown and heated through.
  3. In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and Kalamata olives.
  4. Top the quinoa mixture with the warm falafel patties.
  5. Dollop hummus over the falafel and vegetables.
  6. Drizzle with tahini sauce and fresh lemon juice.
  7. Garnish with crumbled feta cheese and fresh parsley.
  8. Season with salt and black pepper to taste.

Notes

  • For a spicier kick, add a pinch of red pepper flakes.
  • You can prepare the quinoa and chop the vegetables ahead of time for quicker assembly.
  • Serve with warm pita bread or a side salad.
