- 1 cup cooked quinoa
- 6 falafel patties, baked or air-fried
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomatoes
- 1/4 cup chopped red onion
- 1/4 cup Kalamata olives, pitted and halved
- 2 tablespoons crumbled feta cheese
- 2 tablespoons hummus
- 1 tablespoon tahini sauce
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
- Prepare quinoa according to package directions.
- Bake or air-fry falafel patties until golden brown and heated through.
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and Kalamata olives.
- Top the quinoa mixture with the warm falafel patties.
- Dollop hummus over the falafel and vegetables.
- Drizzle with tahini sauce and fresh lemon juice.
- Garnish with crumbled feta cheese and fresh parsley.
