  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup butterscotch chips
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. Beat cream cheese and sugar until smooth.
  4. Melt butterscotch chips and mix into the cream cheese mixture.
  5. Add eggs one at a time, then mix in vanilla extract and heavy cream.
  6. Pour the mixture over the crust and smooth the top.
  7. Bake for 50-60 minutes until the center is set.
  8. Let cool, then refrigerate for at least 4 hours before serving.

Notes
