Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs and melted butter, press into a springform pan.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each.
  5. Melt butterscotch chips and fold into the batter with vanilla.
  6. Pour batter over crust and bake for 50 minutes.
  7. Let cool, then refrigerate for at least 4 hours.
  8. Whip heavy cream and spread over chilled cheesecake.
