  • 1 pound beef sirloin or flank steak, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups cooked brown rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup chopped kimchi (optional)
  • 1/2 cup chopped green onions
  • 2 tablespoons sesame seeds
  • For the sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon sriracha (optional)

Instructions

  1. In a medium bowl, combine the beef, 1/4 cup soy sauce, brown sugar, 1 tablespoon sesame oil, minced garlic, grated ginger, and red pepper flakes (if using). Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Heat a large skillet or wok over medium-high heat. Add the marinated beef and cook until browned and cooked through, about 3-5 minutes.
  3. While the beef is cooking, prepare the sauce. In a small bowl, whisk together 1/4 cup soy sauce, rice vinegar, 1 tablespoon sesame oil, honey, and sriracha (if using).
  4. Assemble the power bowls. Divide the cooked brown rice among four bowls. Top with cooked beef, shredded carrots, sliced cucumber, kimchi (if using), and green onions.
  5. Drizzle the sauce over each bowl and sprinkle with sesame seeds before serving.

Notes

  • You can customize the vegetables in your power bowl to your liking. Bell peppers, spinach, or edamame are great additions.
  • For a spicier kick, add more red pepper flakes to the marinade or sriracha to the sauce.
