Creamy and tangy key lime cheesecake bars with a buttery graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup key lime juice
  • 1 tbsp key lime zest

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the pan bottom.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. Beat cream cheese, sour cream, and 3/4 cup sugar until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in key lime juice and zest.
  7. Pour filling over crust. Bake 25-30 minutes until set.
  8. Cool completely, then refrigerate for 4 hours before slicing.
