- 1.5 lbs boneless, skinless chicken thighs
- 1/3 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1 tbsp cornstarch (optional, for thickening)
- 1 tbsp water (optional, for thickening)
- 1 tsp sesame seeds (optional, for garnish)
- 2 green onions, chopped (optional, for garnish)
- Set the Instant Pot to sauté mode and add olive oil.
- Add chicken thighs and sear for 2-3 minutes per side. Remove and set aside.
- Add garlic to the pot and sauté for 30 seconds.
- Pour in honey, soy sauce, and chicken broth. Stir to combine.
- Return the chicken to the pot, ensuring it’s coated in the sauce.
- Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
- Once done, allow natural pressure release for 5 minutes, then manually release the remaining pressure.
- Optional: Mix cornstarch and water in a small bowl, then stir into the sauce to thicken it.
- Serve the chicken over rice, garnished with sesame seeds and green onions.
