A hearty and wholesome dish that combines tender chicken with a medley of vegetables, all cooked to perfection in an Instant Pot for a homestyle meal.

Ingredients

  • 2 lbs chicken thighs
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup green beans, trimmed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Set your Instant Pot to sauté mode and brown the chicken thighs on both sides.
  2. Add the chopped onion and minced garlic, sautéing until fragrant.
  3. Mix in the carrots, potatoes, and green beans.
  4. Pour in the chicken broth and season with salt, pepper, and paprika.
  5. Close the Instant Pot lid and set to manual high pressure for 15 minutes.
  6. Once done, allow a natural release for 10 minutes before quick releasing the remaining pressure.
  7. Serve hot and enjoy.

Notes

  • You can substitute chicken thighs with chicken breasts if preferred.
  • Feel free to add other vegetables like zucchini or bell peppers.
  • Adjust seasoning to taste.
