- 1.5 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 tbsp cornstarch (optional, for thickening)
- Set the Instant Pot to sauté mode and heat olive oil.
- Add chicken breasts and sear for 2-3 minutes per side.
- Pour in chicken broth and deglaze the pot.
- Add garlic, Italian seasoning, salt, and pepper.
- Close the lid, set to high pressure for 10 minutes, then quick release.
- Remove chicken and shred or slice.
- Set the pot back to sauté mode, add heavy cream and parmesan, and stir until melted.
- Mix cornstarch with 1 tbsp water and stir into sauce to thicken (optional).
- Return chicken to the pot and coat with sauce.
- Serve hot.
Notes
- For extra flavor, add 1/4 tsp red pepper flakes.
- Substitute half-and-half for heavy cream if needed.
- Store leftovers in an airtight container for up to 3 days.
