- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- Set Instant Pot to sauté mode and heat olive oil.
- Add diced onion and minced garlic, sauté until softened.
- Add cubed chicken, salt, pepper, and paprika. Cook until lightly browned.
- Pour in chicken broth and scrape bottom to loosen any bits.
- Stir in rice, close lid, and set to manual pressure cook for 8 minutes.
- Quick release pressure, open lid, and stir in heavy cream.
- Serve hot.
