- 1.5 lbs beef sirloin tips, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp cornstarch (mixed with 2 tbsp water)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add the beef tips and sear until browned on all sides.
- Add the onion and garlic, sauté for 1-2 minutes.
- Pour in the beef broth and Worcestershire sauce, scraping the bottom to deglaze.
- Add salt, pepper, and thyme.
- Close the lid and set to manual high pressure for 15 minutes.
- Allow natural pressure release for 10 minutes, then quick release the remaining pressure.
- Stir in the cornstarch slurry to thicken the gravy.
- Serve hot over mashed potatoes or rice.
Notes
- For extra flavor, add mushrooms along with the onions.
- If the gravy is too thick, thin it with a little more beef broth.
- Store leftovers in an airtight container for up to 3 days.
