Instant Pot Beef Tips with Gravy

A hearty and flavorful dish of tender beef tips smothered in rich gravy, cooked quickly in an Instant Pot.

Ingredients

  • 1.5 lbs beef sirloin tips, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add the beef tips and sear until browned on all sides.
  3. Add the onion and garlic, sauté for 1-2 minutes.
  4. Pour in the beef broth and Worcestershire sauce, scraping the bottom to deglaze.
  5. Add salt, pepper, and thyme.
  6. Close the lid and set to manual high pressure for 15 minutes.
  7. Allow natural pressure release for 10 minutes, then quick release the remaining pressure.
  8. Stir in the cornstarch slurry to thicken the gravy.
  9. Serve hot over mashed potatoes or rice.

Notes

  • For extra flavor, add mushrooms along with the onions.
  • If the gravy is too thick, thin it with a little more beef broth.
  • Store leftovers in an airtight container for up to 3 days.
