- 2 lbs beef stew meat, cubed
- 1 tbsp olive oil
- 1 onion, diced
- 3 carrots, sliced
- 3 potatoes, cubed
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- Set Instant Pot to sauté mode. Add olive oil and brown beef cubes on all sides. Remove and set aside.
- Add onion, carrots, and garlic to the pot. Sauté for 2-3 minutes.
- Stir in tomato paste, thyme, rosemary, and bay leaf.
- Return beef to the pot. Add potatoes and beef broth.
- Close lid and set to manual high pressure for 35 minutes.
- Allow natural pressure release for 10 minutes, then quick release remaining pressure.
- Remove bay leaf, season with salt and pepper, and serve hot.
Notes
- For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in after cooking.
- Leftovers can be refrigerated for up to 3 days.
