A hearty and flavorful beef stew made quickly in the Instant Pot.

Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Brown the beef cubes in batches, then set aside.
  3. Sauté the onion and garlic until soft.
  4. Add the beef back to the pot, along with carrots, potatoes, broth, tomato paste, thyme, rosemary, and bay leaf.
  5. Seal the Instant Pot and cook on high pressure for 35 minutes.
  6. Release the pressure naturally for 10 minutes, then manually release the rest.
  7. Season with salt and pepper to taste before serving.

Notes

  • Cut beef into even-sized pieces for uniform cooking.
  • Deglaze the pot with a splash of broth if needed to prevent burning.
  • Let the pressure release naturally for tender meat.
