  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups sliced fresh peaches
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press mixture evenly into the bottom of the prepared springform pan. Bake for 10 minutes. Let cool.
  3. In a large bowl, beat softened cream cheese and 1 cup granulated sugar with an electric mixer until smooth. Beat in eggs one at a time, then stir in vanilla extract and sour cream until just combined.
  4. Pour cream cheese mixture over the cooled crust. Arrange sliced peaches evenly over the cream cheese layer.
  5. In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs. Sprinkle crumble topping evenly over the peaches.
  6. Bake for 50-60 minutes, or until the center is almost set. The edges should be firm.
  7. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour. This prevents cracking.
  8. Remove from oven and let cool completely on a wire rack. Refrigerate for at least 4 hours, or preferably overnight, before serving.
