This easy homemade strawberry sauce recipe is perfect for topping pancakes, waffles, cheesecake, ice cream, and more. It’s made with fresh or frozen strawberries, sugar, lemon juice, and a touch of cornstarch for thickening.

  • 2 cups fresh or frozen strawberries, hulled and quartered
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

  1. Combine strawberries, sugar, and lemon juice in a medium saucepan.
  2. Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices, about 5-7 minutes.
  3. In a small bowl, whisk together cornstarch and cold water until smooth.
  4. Pour the cornstarch mixture into the simmering strawberries, stirring constantly.
  5. Continue to cook, stirring, until the sauce thickens to your desired consistency, about 2-3 minutes.
  6. Remove from heat and let cool slightly before serving.
  7. Store any leftover sauce in an airtight container in the refrigerator for up to 1 week.

Notes

  • For a smoother sauce, you can mash the strawberries with a fork or an immersion blender after cooking.
  • Adjust the amount of sugar based on the sweetness of your strawberries and your personal preference.
  • If using frozen strawberries, there’s no need to thaw them beforehand. They may release more liquid, so you might need a bit more cornstarch.
