A quick and easy high-protein chicken and rice soup made in the Instant Pot. Perfect for a nutritious, filling meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Add all ingredients to the Instant Pot.
  2. Close the lid and set to high pressure for 10 minutes.
  3. Let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  4. Shred the chicken with a fork.
  5. Stir well and serve hot.

Notes

  • Use brown rice for extra fiber—adjust cooking time to 22 minutes.
  • Add extra vegetables like spinach or peas for more nutrients.
