  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup cooked brown rice
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup salsa
  • 1/4 cup Greek yogurt or sour cream
  • 1/4 cup shredded lettuce
  • 1/4 cup chopped tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1 avocado, diced
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and minced garlic to the skillet. Cook until softened, about 3-5 minutes.
  3. Stir in taco seasoning and water. Bring to a simmer and cook until the liquid has reduced and the turkey is well coated, about 5-7 minutes.
  4. Divide cooked brown rice among four bowls.
  5. Top each bowl with the seasoned turkey mixture.
  6. Add black beans, corn, salsa, Greek yogurt (or sour cream), shredded lettuce, chopped tomatoes, shredded cheddar cheese, and diced avocado to each bowl.
  7. Serve immediately with lime wedges.
