A healthy version of the classic Zuppa Toscana soup made in a slow cooker with lean turkey sausage, kale, and potatoes.

Ingredients

  • 1 lb lean turkey sausage
  • 4 cups chopped kale
  • 3 medium potatoes, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup water
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. Brown the turkey sausage in a skillet over medium heat.
  2. Add the sausage, kale, potatoes, onion, garlic, broth, water, salt, black pepper, and red pepper flakes to the slow cooker.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Stir in the milk during the last 30 minutes of cooking.
  5. Serve hot.

  • Use Italian-seasoned turkey sausage for extra flavor.
  • Substitute almond milk for dairy-free option.
