  • 2 medium zucchini, sliced lengthwise into 1/4-inch thick planks
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh mint, chopped

Instructions

  1. Preheat your grill to medium-high heat.
  2. Toss the zucchini slices with olive oil, salt, and pepper in a large bowl.
  3. Grill the zucchini for 2-3 minutes per side, or until tender and lightly charred.
  4. Transfer the grilled zucchini to a serving platter.
