  • 1 1/2 pounds skirt steak, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large onion, sliced
  • 12 small flour tortillas
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Optional toppings: salsa, guacamole, sour cream

Instructions

  1. Pat the skirt steak dry with paper towels. Slice the steak against the grain into 1/4-inch thick strips.
  2. In a large bowl, combine the olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Add the sliced steak and toss to coat evenly. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat a grill or grill pan to medium-high heat.
  4. While the grill is heating, in another large bowl, toss the sliced bell peppers and onion with 1 tablespoon of olive oil, salt, and pepper.
  5. Grill the vegetables for 5-7 minutes, flipping occasionally, until tender-crisp and slightly charred. Remove from the grill and set aside.
  6. Grill the marinated steak for 2-3 minutes per side, or until cooked to your desired doneness. Skirt steak cooks quickly.
  7. Warm the tortillas according to package directions (you can warm them on the grill for a few seconds per side).
  8. Serve the grilled steak and vegetables in warm tortillas with fresh cilantro, lime wedges, and your favorite toppings.

Notes

  • For extra flavor, marinate the steak overnight.
  • Adjust the amount of cayenne pepper to your spice preference.
  • You can use a cast iron skillet on the stovetop if you do not have a grill.
