Ingredients

Scale
  • 1 pound large sea scallops, patted dry
  • 2 tablespoons olive oil
  • 1 lemon, half thinly sliced, half juiced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a medium bowl, combine the olive oil, lemon juice, minced garlic, chopped parsley, chopped chives, dried oregano, salt, and pepper.
  3. Add the scallops to the bowl and toss gently to coat them evenly with the marinade.
  4. Thread the scallops onto skewers if using, or place them directly on the grill grates.
  5. Grill the scallops for 2-3 minutes per side, or until they are opaque and lightly caramelized.
  6. Remove the scallops from the grill and arrange them on a serving platter.
  7. Garnish with the lemon slices before serving.

Notes

  • Ensure scallops are dry before marinating for better searing.
  • Do not overcook scallops, as they can become rubbery.
  • Serve immediately for the best flavor and texture.
