Grilled scallops in their shells offer a delightful seafood experience. This recipe is simple, highlighting the natural sweetness of the scallops with a hint of smoky flavor.

  • 12 large sea scallops, in the shell
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 lemon, cut into wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Clean the scallop shells thoroughly. Remove any barnacles or debris.
  3. Carefully open the scallop shells. Detach the scallop meat from one side of the shell, leaving it attached to the other. Discard the empty half-shell.
  4. In a small bowl, combine olive oil, minced garlic, chopped parsley, salt, and pepper.
  5. Spoon a small amount of the olive oil mixture over each scallop.
  6. Place the scallop shells directly on the grill grates.
  7. Grill for 3-5 minutes, or until the scallops are opaque and cooked through.
  8. Remove from the grill and serve immediately with lemon wedges.

  • Choose fresh scallops for the best flavor.
  • Do not overcook the scallops; they can become rubbery.
  • If you cannot find scallops in the shell, you can grill shucked scallops in a grill basket or on a skewer.
