Grilled romaine lettuce with a creamy avocado-lime dressing, a fresh and flavorful side dish or light meal.

Ingredients

  • 2 heads romaine lettuce, halved lengthwise
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 ripe avocado
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon water (or more, if needed for consistency)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush the cut sides of the romaine lettuce with 1 tablespoon olive oil and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  3. Place the romaine cut-side down on the grill. Grill for 2-3 minutes, or until slightly charred and softened.
  4. Remove from grill and set aside.
  5. To make the dressing, combine avocado, lime juice, 2 tablespoons olive oil, water, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a blender or food processor.
  6. Blend until smooth and creamy. Add more water if a thinner consistency is desired.
  7. Arrange the grilled romaine on a platter and drizzle generously with the avocado-lime dressing.
  8. Serve immediately.

Notes

  • You can add grilled chicken or shrimp to make this a more substantial meal.
  • A sprinkle of chili flakes can add a bit of heat to the dressing.
  • If you don’t have a grill, you can sear the romaine in a hot pan.
