2 heads romaine lettuce, halved lengthwise
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1 ripe avocado
1/4 cup fresh lime juice
2 tablespoons olive oil
1 tablespoon water (or more, if needed for consistency)
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat grill to medium-high heat.
Brush the cut sides of the romaine lettuce with 1 tablespoon olive oil and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
Place the romaine cut-side down on the grill. Grill for 2-3 minutes, or until slightly charred and softened.
Remove from grill and set aside.
To make the dressing, combine avocado, lime juice, 2 tablespoons olive oil, water, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a blender or food processor.
Blend until smooth and creamy. Add more water if a thinner consistency is desired.
Arrange the grilled romaine on a platter and drizzle generously with the avocado-lime dressing.
Serve immediately.
Notes
You can add grilled chicken or shrimp to make this a more substantial meal.
A sprinkle of chili flakes can add a bit of heat to the dressing.
If you don’t have a grill, you can sear the romaine in a hot pan.
