Instructions

  1. Pat the Mahi Mahi fillets dry with paper towels.
  2. In a small bowl, combine the blackened seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
  3. Brush the Mahi Mahi fillets with olive oil on both sides.
  4. Generously rub the seasoning mixture onto both sides of the fillets, pressing gently to adhere.
  5. Preheat your grill to medium-high heat (about 400-450°F or 200-230°C). Lightly oil the grill grates to prevent sticking.
  6. Place the seasoned Mahi Mahi fillets on the hot grill.
