- 1 pound ground lamb
- 1/2 cup finely chopped onion
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
- In a large bowl, combine the ground lamb, chopped onion, parsley, mint, cumin, coriander, paprika, cayenne pepper (if using), salt, and black pepper.
- Mix the ingredients thoroughly until well combined. Do not overmix.
- Divide the mixture into 8 equal portions.
- Shape each portion around a skewer into an elongated oval, about 4-5 inches long.
- Preheat your grill to medium-high heat.
- Lightly oil the grill grates to prevent sticking.
- Place the kofta kebabs on the hot grill.
- Grill for 3-4 minutes per side, or until cooked through and nicely browned.
- Remove from the grill and serve hot.
Notes
- For best results, use lean ground lamb.
