Flavorful grilled lamb kofta kebabs, perfect for a Mediterranean-inspired meal. These kebabs are easy to prepare and cook quickly.

Ingredients

  • 1 pound ground lamb
  • 1/2 cup finely chopped onion
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine the ground lamb, chopped onion, parsley, mint, cumin, coriander, paprika, cayenne pepper (if using), salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined. Do not overmix.
  3. Divide the mixture into 8 equal portions.
  4. Shape each portion around a skewer into an elongated oval, about 4-5 inches long.
  5. Preheat your grill to medium-high heat.
  6. Lightly oil the grill grates to prevent sticking.
  7. Place the kofta kebabs on the hot grill.
  8. Grill for 3-4 minutes per side, or until cooked through and nicely browned.
  9. Remove from the grill and serve hot.

Notes

  • For best results, use lean ground lamb.
  • You can prepare the kofta mixture ahead of time and refrigerate it for up to 24 hours.
  • Serve with pita bread, tzatziki sauce, or a fresh salad.
  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
