8 lamb loin chops, about 1 1/2 inches thick
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
2 tablespoons fresh chives, chopped
1 clove garlic, minced
1 tablespoon lemon juice
2 tablespoons olive oil (for sauce)
Instructions
Pat the lamb chops dry with paper towels. Rub with 2 tablespoons olive oil, salt, and pepper.
Preheat a grill to medium-high heat.
Grill the lamb chops for 4-5 minutes per side for medium-rare, or until desired doneness.
While the chops are grilling, prepare the herb sauce. In a small bowl, combine parsley, mint, chives, minced garlic, lemon juice, and 2 tablespoons olive oil.
Remove the lamb chops from the grill and let them rest for 5 minutes.
Serve the grilled lamb chops with the herb sauce.
Notes
Adjust grilling time based on the thickness of your lamb chops and your desired doneness.
