Tender grilled lamb chops with a fresh herb sauce. This dish is perfect for a special occasion or a flavorful weeknight meal.

  • 8 lamb loin chops, about 1 1/2 inches thick
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil (for sauce)

Instructions

  1. Pat the lamb chops dry with paper towels. Rub with 2 tablespoons olive oil, salt, and pepper.
  2. Preheat a grill to medium-high heat.
  3. Grill the lamb chops for 4-5 minutes per side for medium-rare, or until desired doneness.
  4. While the chops are grilling, prepare the herb sauce. In a small bowl, combine parsley, mint, chives, minced garlic, lemon juice, and 2 tablespoons olive oil.
  5. Remove the lamb chops from the grill and let them rest for 5 minutes.
  6. Serve the grilled lamb chops with the herb sauce.

Notes

  • Adjust grilling time based on the thickness of your lamb chops and your desired doneness.
  • For a spicier sauce, add a pinch of red pepper flakes.
  • Leftover sauce can be stored in the refrigerator for up to 3 days.
