  • 4 halibut fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush halibut fillets with olive oil and season with salt and pepper.
  3. Grill halibut for 4-5 minutes per side, or until cooked through and flaky.
  4. While halibut cooks, prepare the cilantro garlic butter. In a small bowl, combine softened butter, chopped cilantro, minced garlic, lemon juice, and lemon zest.
  5. Once halibut is cooked, remove from grill and top each fillet with a dollop of cilantro garlic butter.
  6. Serve immediately.
