4 halibut fillets (6 oz each)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup unsalted butter, softened
1/4 cup fresh cilantro, chopped
3 cloves garlic, minced
1 tablespoon fresh lemon juice
1/2 teaspoon lemon zest
Instructions
Preheat your grill to medium-high heat.
Brush halibut fillets with olive oil and season with salt and pepper.
Grill halibut for 4-5 minutes per side, or until cooked through and flaky.
While halibut cooks, prepare the cilantro garlic butter. In a small bowl, combine softened butter, chopped cilantro, minced garlic, lemon juice, and lemon zest.
Once halibut is cooked, remove from grill and top each fillet with a dollop of cilantro garlic butter.
