Ingredients
Scale
1.5 lbs hanger steak, trimmed of silver skin
3 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1/2 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Pat the hanger steak dry with paper towels.
In a medium bowl, whisk together the minced garlic, chopped rosemary, chopped thyme, olive oil, red wine vinegar, salt, and black pepper.
Place the hanger steak in a shallow dish or a resealable bag. Pour the marinade over the steak, ensuring it’s fully coated.
Marinate in the refrigerator for at least 2 hours, or preferably overnight.
Preheat your grill to high heat (around 450-500°F).
Remove the steak from the marinade, allowing excess to drip off. Discard the remaining marinade.
Grill the hanger steak for 4-6 minutes per side for medium-rare, or longer for your desired doneness.
Transfer the steak to a cutting board and let it rest for 5-10 minutes before slicing against the grain.
Serve immediately.
Notes
Hanger steak is best cooked to medium-rare or medium to maintain tenderness.
Slicing against the grain is crucial for a tender bite.
For extra flavor, you can sear the steak in a cast-iron skillet after grilling.
