Grilled eggplant slices marinated in garlic and herbs, perfect as a side dish or appetizer.

Ingredients

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, minced garlic, oregano, basil, salt, and pepper.
  3. Brush both sides of the eggplant slices with the garlic-herb mixture.
  4. Place the eggplant slices on the preheated grill.
  5. Grill for 3-5 minutes per side, or until tender and grill marks appear.
  6. Remove from grill and serve warm.

Notes

  • For extra flavor, sprinkle with fresh parsley before serving.
  • You can also bake the eggplant at 400°F (200°C) for 15-20 minutes.
