1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
2 tablespoons warm water (or more, for desired consistency)
1/4 cup chopped fresh cilantro, for garnish
Instructions
Preheat your grill to medium-high heat.
Brush the chicken breasts with olive oil and season with salt and pepper.
Grill the chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
While the chicken is grilling, prepare the peanut sauce. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, ginger, and minced garlic.
Gradually whisk in the warm water until the sauce reaches your desired consistency.
Once the chicken is cooked, slice it into strips or serve whole.
