  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh basil leaves
  • 1/4 cup olive oil (for dressing)
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt (for dressing)
  • Pinch of black pepper (for dressing)

Instructions

  1. Pat chicken breasts dry with paper towels. Rub with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Preheat grill to medium-high heat.
  3. Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Remove from grill and let rest for 5 minutes.
  4. While chicken is grilling, prepare the basil dressing. In a food processor or blender, combine basil leaves, 1/4 cup olive oil, lemon juice, minced garlic, 1/4 teaspoon salt, and a pinch of black pepper. Blend until smooth.
  5. Slice the grilled chicken and drizzle generously with the basil dressing. Serve immediately.

Notes

  • For extra flavor, marinate the chicken in a portion of the basil dressing for at least 30 minutes before grilling.
  • Leftover basil dressing can be stored in an airtight container in the refrigerator for up to 3 days.
