  • 4 boneless, skinless chicken thighs
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, combine smoked paprika, garlic powder, onion powder, oregano, cumin, cayenne pepper (if using), salt, and black pepper.
  2. Pat the chicken thighs dry with paper towels.
  3. Rub the spice mixture evenly over both sides of the chicken thighs.
  4. Drizzle the chicken with olive oil and rub to coat.
  5. Preheat your grill to medium-high heat (around 400°F or 200°C).
  6. Place the chicken thighs on the preheated grill.
  7. Grill for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  8. Remove from the grill and let rest for 5 minutes before serving.

  • Adjust the amount of cayenne pepper to your preferred spice level.
  • For extra flavor, marinate the chicken in the spice rub and olive oil for at least 30 minutes, or up to 4 hours in the refrigerator.
