1 (15-ounce) can black beans, rinsed and drained
1/2 cup cooked brown rice
1/4 cup breadcrumbs
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and black pepper to taste
1 tablespoon olive oil, plus more for brushing
4 burger buns
Toppings of your choice (lettuce, tomato, avocado, etc.)
Instructions
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but still with some texture.
Add the cooked brown rice, breadcrumbs, red onion, cilantro, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper to the mashed black beans. Mix until well combined.
Form the mixture into 4 patties, about 1-inch thick.
Brush both sides of the patties lightly with olive oil.
Preheat your grill to medium heat (about 375-400°F).
Place the patties on the preheated grill and cook for 5-7 minutes per side, or until heated through and nicely browned with grill marks.
Toast the burger buns on the grill for 1-2 minutes, if desired.
Assemble the burgers with your favorite toppings and serve immediately.
Notes
For extra flavor, you can add a dash of your favorite hot sauce to the black bean mixture.
If the mixture is too wet to form patties, add a little more breadcrumbs. If it’s too dry, add a tiny bit of water or a few drops of olive oil.
These burgers can also be cooked in a skillet on the stovetop over medium heat for 5-7 minutes per side.
Leftover patties can be stored in an airtight container in the refrigerator for up to 3 days.
