Juicy grilled chicken breasts marinated in a flavorful Greek mixture of lemon, garlic, and herbs.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pound chicken breasts to an even thickness (about 3/4 inch).
  2. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  3. Add chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. Preheat grill to medium-high heat. Lightly oil the grill grates.
  5. Remove chicken from marinade, discarding any remaining marinade.
  6. Grill chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  7. Let chicken rest for 5 minutes before slicing and serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the marinade for a subtle kick.
  • Serve with a side of Greek salad, rice, or roasted vegetables.
  • Leftover grilled chicken can be used in salads, sandwiches, or wraps.
