Delicious and easy gluten-free chocolate chip muffins perfect for breakfast or a snack.

Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup melted butter
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a muffin tin with paper liners.
  3. Mix gluten-free flour, sugar, baking powder, and salt in a bowl.
  4. In another bowl, whisk melted butter, egg, milk, and vanilla.
  5. Combine wet and dry ingredients until just mixed.
  6. Fold in chocolate chips.
  7. Fill muffin liners 2/3 full.
  8. Bake for 18-20 minutes until golden.
  9. Cool before serving.
