  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated parmesan cheese
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • 2 tbsp chopped fresh parsley

Instructions

  1. Place chicken and potatoes in the crockpot.
  2. In a bowl, mix parmesan, olive oil, garlic, oregano, basil, salt, and pepper.
  3. Pour the mixture over the chicken and potatoes. Toss to coat.
  4. Add chicken broth.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Garnish with fresh parsley before serving.
