  • 1 lime, halved

  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes.
  3. Add sliced bell peppers and onion to the skillet. Cook until vegetables are tender-crisp, about 5-7 minutes.
  4. Stir in fajita seasoning, salt, and pepper. Cook for another 1-2 minutes, ensuring everything is well combined.
  5. While the chicken and vegetables are cooking, heat a separate dry skillet or grill pan over high heat. Place the lime halves cut-side down on the hot pan. Cook until the limes are charred and slightly softened, about 3-5 minutes.
  6. To assemble the bowls, divide the cooked rice among serving bowls.
  7. Top the rice with the fajita chicken and vegetable mixture.
  8. Squeeze the juice from the burnt lime halves over each bowl.
  9. Garnish with fresh cilantro. Serve immediately.
