A simple and healthy casserole made with ground turkey and sweet potatoes, perfect for a quick weeknight dinner.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
  3. Add ground turkey, salt, pepper, paprika, and thyme. Cook until turkey is browned.
  4. In a greased baking dish, layer diced sweet potatoes and cooked turkey mixture.
  5. Cover with foil and bake for 30 minutes.
  6. Remove foil, sprinkle cheese if using, and bake for another 10 minutes until cheese melts.
  7. Garnish with parsley before serving.

Notes

  • You can substitute ground chicken for turkey.
  • For a dairy-free version, skip the cheese.
  • Store leftovers in an airtight container for up to 3 days.
