- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped fresh parsley (for garnish)
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
- Add ground turkey, salt, pepper, paprika, and thyme. Cook until turkey is browned.
- In a greased baking dish, layer diced sweet potatoes and cooked turkey mixture.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese if using, and bake for another 10 minutes until cheese melts.
- Garnish with parsley before serving.
